Indulge in the flavors of summer with this Rustic Peach and Basil Galette. The flaky crust, juicy peach slices, and fragrant basil create a delightful treat perfect for dessert, brunch, or a casual gathering.
Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon salt
– 1 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 4 medium peaches, pitted and sliced
– 1/2 cup granulated sugar
– 2 tablespoons fresh basil, chopped
– 1 egg, beaten
Instructions
1. – In a food processor, pulse the flour and salt until combined. Add the chilled butter and pulse until the mixture resembles coarse crumbs.
2. – Add the ice water and pulse until the dough just starts to come together. Do not overmix.
3. – Turn the dough out onto a lightly floured surface and gently shape into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
4. – Preheat the oven to 400°F. Line a baking sheet with parchment paper.
5. – On a lightly floured surface, roll the dough out into a 12-inch circle, about 1/4 inch thick. Transfer to the prepared baking sheet.
6. – Arrange the peach slices in the center of the dough, leaving a 2-inch border. Sprinkle the sugar and chopped basil over the peaches.
7. – Fold the dough border over the peaches, pleating it as you go. Brush the dough with the beaten egg.
8. – Bake for 35-40 minutes, or until the crust is golden brown and the peaches are bubbling.
9. – Allow to cool for 10 minutes before slicing and serving.
Notes
For a variation, try using a mix of stone fruits, such as nectarines or plums, in addition to the peaches. The galette can be served warm or at room temperature.
