Ingredients
– 3 lbs sweet potatoes, peeled and cut into 1-inch wedges
– 3 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1 tsp paprika
– 1/2 tsp garlic powder
Instructions
1. – Preheat oven to 400°F (200°C).
2. – In a large bowl, toss the sweet potato wedges with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
3. – Spread the seasoned sweet potato wedges in a single layer on a large baking sheet.
4. – Roast for 25-30 minutes, flipping halfway, until the potatoes are tender and lightly browned on the edges.
5. – Serve hot, garnished with fresh parsley if desired.
Notes
For extra crispy potatoes, try roasting at 425°F (220°C) for 30-35 minutes. You can also adjust the seasonings to your liking, adding a pinch of cayenne or a squeeze of lemon juice.
