Ingredients
– 1 lb carrots, peeled and cut into 1-inch pieces
– 2 tbsp olive oil
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup whole milk ricotta
– 2 tbsp heavy cream
– 1 tbsp honey
– 2 tbsp hot honey
Instructions
1. – Preheat oven to 400°F. Toss the carrots with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly caramelized.
2. – In a small bowl, whip the ricotta and heavy cream until light and fluffy.
3. – Spread the whipped ricotta on a serving plate. Top with the roasted carrots and drizzle with regular honey and hot honey.
4. – Serve immediately, garnished with chopped fresh herbs if desired.
Notes
For extra flavor, try tossing the roasted carrots in a bit of the hot honey before assembling the dish. You can also experiment with different types of honey, such as wildflower or clover, to complement the carrots.
