Description

Indulge in the rich, comforting flavors of traditional Greek Rice And Cabbage In Sauce (Lahanorizo). This hearty dish features tender rice and shredded cabbage simmered in a savory, tomato-based sauce, seasoned with aromatic herbs and spices.

Ingredients

– 1 cup uncooked long-grain rice

– 1 medium head of green cabbage, shredded

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tomatoes, diced

– 1/4 cup olive oil

– 1 cup vegetable or chicken broth

– 2 tbsp tomato paste

– 1 tsp dried oregano

– 1/2 tsp ground cinnamon

– Salt and pepper to taste

Instructions

1. 1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

2. 2. Add the minced garlic and cook for an additional minute, stirring constantly.

3. 3. Stir in the shredded cabbage and sauté for 5-7 minutes, until the cabbage starts to wilt.

4. 4. Pour in the vegetable or chicken broth and add the diced tomatoes, tomato paste, oregano, and cinnamon. Season with salt and pepper to taste.

5. 5. Bring the mixture to a simmer, then add the uncooked rice. Cover the pot and reduce heat to low.

6. 6. Cook for 20-25 minutes, stirring occasionally, until the rice is tender and the cabbage is cooked through.

7. 7. Remove from heat and let sit for 5 minutes before serving. Enjoy!
