Description

Indulge in the perfect balance of tart rhubarb and warm ginger in this easy-to-make Rhubarb & Ginger Switter Crumble. The buttery crumble topping perfectly complements the vibrant filling, creating a delightful spring or summer dessert.


Ingredients

– 4 cups chopped rhubarb

– 1/2 cup granulated sugar

– 2 tablespoons all-purpose flour

– 1 teaspoon grated fresh ginger

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1 cup all-purpose flour

– 1/2 cup brown sugar

– 1/2 cup unsalted butter, chilled and cubed

– 1/2 cup rolled oats


Instructions

1. – Preheat the oven to 375°F (190°C).

2. – In a large bowl, combine the chopped rhubarb, granulated sugar, 2 tablespoons of flour, grated ginger, cinnamon, and nutmeg. Mix well and set aside.

3. – In a separate bowl, mix together the 1 cup of flour, brown sugar, and cubed butter until the mixture resembles coarse crumbs. Stir in the rolled oats.

4. – Transfer the rhubarb mixture to a 9-inch baking dish. Sprinkle the crumble topping evenly over the top.

5. – Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.

6. – Allow to cool for 10-15 minutes before serving. Enjoy warm, with a scoop of vanilla ice cream if desired.

Notes

– For a creamier texture, you can add a tablespoon of heavy cream or milk to the crumble topping.

– Experiment with different types of fruit, such as strawberries or apples, in place of the rhubarb.
