Description

Remi’s Ratatouille Soup is a comforting and flavorful vegetable-based dish that’s perfect for a cozy night in. This soup is packed with a variety of fresh vegetables, simmered in a savory broth, and infused with aromatic herbs and spices.


Ingredients

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 cloves garlic, minced

– 2 bell peppers, diced

– 2 zucchini, diced

– 4 tomatoes, diced

– 4 cups vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried oregano

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot, heat the olive oil over medium heat.

2. 2. Add the diced onion and sauté for 5 minutes, or until translucent.

3. 3. Add the minced garlic and sauté for an additional 1 minute.

4. 4. Stir in the diced bell peppers, zucchini, and tomatoes. Cook for 10 minutes, stirring occasionally.
