Ingredients
– 6 oz white chocolate, chopped
– 1 cup heavy cream
– 1/4 cup granulated sugar
– 1 tsp vanilla extract
– 1 cup fresh raspberries
Instructions
1. – Melt the white chocolate in a double boiler or microwave, stirring frequently until smooth. Set aside to cool slightly.
2. – In a large bowl, whip the heavy cream until soft peaks form. Gradually add the sugar and vanilla, and continue whipping until stiff peaks form.
3. – Gently fold the melted white chocolate into the whipped cream until just combined.
4. – Fold in the fresh raspberries, taking care not to overmix.
5. – Spoon the mousse into individual serving dishes or one large serving bowl.
6. – Refrigerate for at least 2 hours, or until set.
