Packed with a rainbow of fresh vegetables and creamy hummus, these Rainbow Veggie Wraps make a delightful and nutritious lunch or snack that’s ready in just 5 minutes.
Ingredients
– 4 whole wheat tortillas
– 1 red bell pepper, thinly sliced
– 1 yellow bell pepper, thinly sliced
– 1 cucumber, thinly sliced
– 2 carrots, peeled and thinly sliced
– 2 cups baby spinach or arugula
– 1 cup hummus (your favorite flavor)
Instructions
1. – Lay the tortillas on a flat surface.
2. – Spread 1/4 cup of hummus evenly over each tortilla, leaving a 1-inch border.
3. – Arrange the sliced bell peppers, cucumbers, carrots, and leafy greens in a line down the center of each tortilla.
4. – Carefully roll up the tortillas tightly, tucking in the sides as you go.
5. – Slice the wraps in half diagonally and serve with any remaining hummus for dipping.
Notes
For added flavor, try using flavored hummus, such as roasted red pepper or garlic herb. These wraps can be made ahead and refrigerated for up to 3 days.
