Description

Ingredients

– 1 lb beef chuck roast

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– Salt and pepper to taste

– 8 flour tortillas

– 2 cups shredded Oaxaca or Monterey Jack cheese

– 4 cups beef broth

– 2 tbsp apple cider vinegar

– Chopped cilantro for garnish


Instructions

1. 1. In a large pot, brown the beef over medium-high heat until seared on all sides.

2. 2. Add the onions and garlic, and sauté until fragrant, about 2-3 minutes.

3. 3. Pour in the beef broth and add the chili powder, cumin, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the beef is tender and shredding easily.

4. 4. Remove the beef from the broth and shred it using two forks.

5. 5. Return the shredded beef to the broth and stir in the apple cider vinegar.

6. 6. To assemble the burritos, warm the tortillas and place a portion of the shredded beef and cheese in the center of each one. Fold the sides over and roll up tightly.

7. 7. Serve the Quesabirria burritos warm, with the flavorful consomé broth on the side for dipping.

Notes

For a spicier twist, add diced jalapeños or serrano peppers to the beef filling. You can also experiment with different cheese varieties, such as Queso Fresco or Oaxaca.
