Ingredients
– 2 lbs purple sweet potatoes, peeled and chopped
– 1 cup granulated sugar
– 1/2 cup water
– 2 tbsp lemon juice
Instructions
1. – In a saucepan, combine the chopped purple sweet potatoes, sugar, and water.
2. – Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
3. – Cook, stirring occasionally, for 20-25 minutes until the sweet potatoes are very soft and the mixture has thickened.
4. – Remove from heat and stir in the lemon juice.
5. – Use an immersion blender or regular blender to puree the jam until smooth and creamy.
6. – Transfer the jam to sterilized jars and refrigerate for up to 2 weeks.
Notes
For a chunkier texture, mash the cooked sweet potatoes with a potato masher instead of blending. The jam can also be canned for longer shelf life. Adjust sweetness to taste.
