Ingredients
– 1 (15 oz) can pumpkin puree
– 3 large eggs
– 1 cup granulated sugar
– 1 cup light corn syrup
– 1/2 cup unsalted butter, melted
– 1 tsp ground cinnamon
– 1/2 tsp ground ginger
– 1/4 tsp ground cloves
– 1/4 tsp ground nutmeg
– 1 pre-made pie crust
– 1 cup chopped pecans
Instructions
1. – Preheat oven to 375°F.
2. – In a large bowl, whisk together the pumpkin puree, eggs, sugar, corn syrup, melted butter, cinnamon, ginger, cloves, and nutmeg until well combined.
3. – Unroll the pre-made pie crust and place it in a 9-inch pie dish. Crimp the edges as desired.
4. – Pour the pumpkin filling into the prepared pie crust.
5. – Sprinkle the chopped pecans evenly over the top of the filling.
6. – Bake for 40-50 minutes, or until the center is set and the crust is golden brown.
7. – Allow the pie to cool completely before slicing and serving.
Notes
For a richer flavor, use dark corn syrup instead of light. You can also add a tablespoon of bourbon or brandy to the filling. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
