Ingredients

– 1 whole wheat tortilla

– 1/2 cup cooked black beans

– 1/2 cup cooked brown rice

– 1/4 cup diced bell pepper

– 1/4 cup diced onion

– 1 tbsp avocado

– 1 tsp chili powder

– 1/2 tsp cumin

– 1/4 tsp garlic powder

– Salt and pepper to taste


Instructions

1. 1. Heat the whole wheat tortilla in a skillet or griddle over medium heat, flipping occasionally, until lightly charred and warm.

2. 2. In a bowl, mix together the cooked black beans, brown rice, diced bell pepper, and diced onion.

3. 3. Season the bean and rice mixture with chili powder, cumin, garlic powder, salt, and pepper. Stir to combine.
