Ingredients

– 2 cups all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 2 large eggs

– 1 cup milk

– 2 tablespoons granulated sugar

– 1 cup fresh pineapple, diced into 1/2-inch cubes

– Vegetable oil for frying

– Powdered sugar for dusting (optional)


Instructions

1. – In a large bowl, whisk together the flour, baking powder, and salt.

2. – In a separate bowl, beat the eggs, then stir in the milk and sugar until well combined.

3. – Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.

4. – Gently fold in the diced pineapple.

5. – In a large skillet or Dutch oven, heat 2-3 inches of vegetable oil to 350°F.

6. – Working in batches, carefully drop tablespoon-sized scoops of the batter into the hot oil and fry for 2-3 minutes per side, or until golden brown.

7. – Transfer the fried fritters to a paper towel-lined plate to drain.

Notes

– For best results, use fresh, ripe pineapple. Canned pineapple can also be used, but may result in a softer texture.
