Description

This Pesto Caprese Press is a delectable grilled sandwich that combines the flavors of fresh basil pesto, creamy mozzarella cheese, and juicy tomatoes. It’s the perfect quick and easy lunch or snack that’s sure to satisfy your taste buds.


Ingredients

– 8 slices sourdough or crusty bread

– 1 cup fresh basil leaves

– 2 cloves garlic

– 1/4 cup pine nuts

– 1/4 cup grated Parmesan cheese

– 1/4 cup olive oil

– 8 ounces fresh mozzarella cheese, sliced

– 2 tomatoes, sliced


Instructions

1. – Make the pesto: In a food processor, combine the basil, garlic, pine nuts, and Parmesan. Pulse until finely chopped. Slowly drizzle in the olive oil and process until a smooth pesto forms.

2. – Spread the pesto evenly on 4 slices of bread.

3. – Top the pesto-coated bread with the mozzarella cheese slices and tomato slices.

4. – Place the remaining 4 bread slices on top to create sandwiches.

5. – Heat a grill pan or griddle over medium heat. Cook the sandwiches for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted.

6. – Remove from heat, slice in half, and serve hot.

Notes

For a crispier crust, brush the outside of the bread lightly with olive oil before grilling. You can also try adding a drizzle of balsamic glaze or a few fresh basil leaves as a garnish.
