Description

Tender, juicy chicken simmered in a bold, tangy sauce with pepperoncini peppers – this Pepperoncini Chicken Skillet is a quick and flavorful one-pan dinner that’s ready in just 30 minutes!


Ingredients

– 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

– 1 tbsp olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 cup pepperoncini peppers, sliced

– 1 cup chicken broth

– 2 tbsp red wine vinegar

– 1 tsp dried oregano

– 1/2 tsp crushed red pepper flakes

– Salt and black pepper, to taste

– Chopped parsley, for garnish (optional)


Instructions

1. – Heat the olive oil in a large skillet over medium-high heat.

2. – Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.

3. – Add the onion and garlic to the skillet and sauté for 2-3 minutes until fragrant.

4. – Pour in the chicken broth, red wine vinegar, oregano, and red pepper flakes. Stir to combine.

5. – Add the pepperoncini peppers and season with salt and black pepper to taste.

6. – Bring the mixture to a simmer and let cook for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.

7. – Garnish with chopped parsley, if desired. Serve hot over rice, pasta, or with a side salad.

Notes

– For a spicier version, add more red pepper flakes.

– Try using a mix of pepperoncini and banana peppers for a variety of flavors.
