Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 1/2 cups all-purpose flour
– 1/4 teaspoon salt
– 3 large eggs
– 1 cup light brown sugar
– 1 cup light corn syrup
– 1/4 cup unsalted butter, melted
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 2 cups chopped pecans
Instructions
1. – Preheat the oven to 350°F. Grease a 9×13-inch baking pan.
2. – In a large bowl, beat the 1 cup of softened butter and granulated sugar together until light and fluffy.
3. – Beat in the 1 egg and 1 teaspoon of vanilla extract.
4. – Gradually stir in the flour and 1/4 teaspoon of salt until just combined.
5. – Press the dough evenly into the prepared baking pan.
6. – In a medium bowl, whisk together the 3 eggs, brown sugar, corn syrup, melted 1/4 cup butter, 1 teaspoon vanilla, and 1/4 teaspoon salt until well combined.
7. – Stir in the chopped pecans.
8. – Pour the pecan mixture over the crust and spread it evenly.
9. – Bake for 30-35 minutes, or until the center is set.
10. – Allow the bars to cool completely before cutting into squares.
Notes
For best results, chill the bars in the refrigerator for at least 2 hours before serving. Bars can be stored in an airtight container at room temperature for up to 5 days.
