Description

Ingredients

– 1 cup (240ml) aquafaba (liquid from a can of chickpeas)

– 1 cup (240g) creamy peanut butter

– 1/2 cup (60g) powdered sugar

– 1 teaspoon vanilla extract


Instructions

1. – In a large bowl, beat the aquafaba with an electric mixer until stiff peaks form, about 5-7 minutes.

2. – In a separate bowl, whisk together the peanut butter, powdered sugar, and vanilla extract until smooth.

3. – Gently fold the peanut butter mixture into the whipped aquafaba until well combined.

4. – Spoon or pipe the peanut butter mousse into individual serving dishes or one larger serving bowl.

5. – Refrigerate for at least 30 minutes before serving to allow the mousse to set.

6. – Garnish with a drizzle of melted dark chocolate, chopped peanuts, or a mint sprig, if desired.

Notes

Store any leftover mousse in an airtight container in the refrigerator for up to 5 days. The mousse can also be frozen for up to 2 months.
