Ingredients

– 2 cups all-purpose flour

– 1 1/2 cups old-fashioned oats

– 1 cup brown sugar

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, melted

– 3 cups fresh peach slices (about 4-5 medium peaches)

– 2 tablespoons granulated sugar

– 1 teaspoon ground cinnamon


Instructions

1. – Preheat oven to 350°F. Grease an 8×8-inch baking pan.

2. – In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Stir in the melted butter until a crumbly dough forms.

3. – Press half of the dough into the prepared baking pan, creating an even layer.

4. – In a separate bowl, toss the peach slices with the granulated sugar and cinnamon.

5. – Arrange the cinnamon-sugar peach slices in an even layer over the bottom crust.

6. – Crumble the remaining dough over the peach layer, creating a streusel-like topping.

7. – Bake for 35-40 minutes, or until the top is golden brown and the peaches are bubbly.

8. – Allow the bars to cool completely before cutting and serving.

Notes

– For a cakier texture, add 1 egg to the dough.
