Description
Crispy, flavorful Parmesan Pesto Roasted Potatoes are the perfect side dish or snack. Roasted to perfection with a homemade garlic-basil pesto and melty parmesan cheese.
Ingredients
– 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
– 1/4 cup olive oil
– 1/2 cup homemade or store-bought basil pesto
– 1 cup shredded parmesan cheese
– 1/4 tsp salt
– 1/4 tsp black pepper
– 2 tbsp chopped fresh basil
Instructions
1. – Preheat oven to 400°F. Line a large baking sheet with parchment paper.
2. – In a large bowl, toss the cubed potatoes with the olive oil, pesto, 1/2 cup of the parmesan, salt, and pepper until evenly coated.
3. – Spread the potatoes in a single layer on the prepared baking sheet.
4. – Roast for 25-30 minutes, flipping halfway, until the potatoes are golden brown and crispy.
5. – Remove from oven and sprinkle with the remaining 1/2 cup parmesan and chopped basil.
6. – Serve hot and enjoy!
Notes
– For extra crispy potatoes, roast at 425°F.
– Try using a mix of Yukon Gold and sweet potatoes.
– Substitute other herbs like rosemary or thyme for the basil.
