Description

This Overnight Blueberry French Toast Bake is a delightful, make-ahead breakfast casserole that’s bursting with juicy blueberries and a hint of cinnamon. It’s the perfect dish for a cozy weekend brunch or busy weekday mornings.

Ingredients

– 8 cups cubed bread (such as French or challah)

– 2 cups fresh or frozen blueberries

– 8 large eggs

– 2 cups milk

– 1/2 cup heavy cream

– 1/4 cup granulated sugar

– 2 teaspoons vanilla extract

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon salt

Instructions

1. – Grease a 9×13-inch baking dish. Place the cubed bread in the prepared dish and sprinkle the blueberries evenly over the top.

2. – In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla, cinnamon, and salt until well combined.

3. – Pour the egg mixture over the bread and blueberries, making sure all the bread is submerged.

4. – Cover and refrigerate for at least 8 hours or up to 24 hours.

5. – When ready to bake, preheat the oven to 350°F (177°C).

6. – Bake the casserole for 45-55 minutes, or until the center is set and the top is golden brown.

7. – Let the casserole cool for 5-10 minutes before serving.

Notes

– For a creamier texture, use a combination of milk and half-and-half or heavy cream.

– Serve the Overnight Blueberry French Toast Bake with a dusting of powdered sugar, a drizzle of maple syrup, or a dollop of whipped cream.

– This recipe can be easily doubled to feed a crowd.
