Description

Ingredients

– 1 lb ground beef

– 1 lb Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (28 oz) can crushed tomatoes

– 4 cups beef broth

– 2 cups water

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese

– Chopped fresh parsley for garnish


Instructions

1. – In a large pot or Dutch oven, cook the ground beef and Italian sausage over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the onion and garlic to the pot and cook for 2-3 minutes until softened.

3. – Pour in the crushed tomatoes, beef broth, and water. Bring the mixture to a boil.

4. – Add the broken lasagna noodles, oregano, basil, salt, and pepper. Reduce heat and simmer for 15-20 minutes, until the pasta is tender.

5. – Stir in the mozzarella and Parmesan cheeses until melted.

6. – Ladle the one pot lasagna soup into bowls and garnish with fresh chopped parsley.

Notes

– For a creamier texture, stir in 1/2 cup of ricotta cheese at the end.

– Swap out the Italian sausage for ground turkey or chicken for a leaner option.

– Top with additional shredded cheese, fresh basil, or crushed red pepper flakes.
