Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1/4 tsp cayenne pepper

– Salt and pepper to taste

– 12 small corn or flour tortillas

– Toppings: shredded cabbage, diced avocado, chopped cilantro, lime wedges


Instructions

1. – In a large skillet, heat the olive oil over medium-high heat.

2. – Add the cubed chicken and sauté for 5-7 minutes, until chicken is cooked through.

3. – Stir in the drained pineapple chunks, chili powder, cumin, garlic powder, and cayenne. Season with salt and pepper.

4. – Cook for an additional 2-3 minutes, allowing the flavors to blend.

5. – Serve the chicken and pineapple mixture in warm tortillas, topped with shredded cabbage, diced avocado, chopped cilantro, and a squeeze of fresh lime juice.

Notes

For a spicier version, increase the amount of cayenne pepper. Leftover chicken and pineapple mixture can be stored in the refrigerator for up to 3 days and reheated before serving.
