Celebrate the flavors of Oktoberfest with this cozy and comforting stew featuring tender chunks of smoked sausage, potatoes, and a rich, lager-infused broth. Ready in just 30 minutes, it’s the perfect meal for cool autumn nights.


Ingredients

– 1 lb smoked sausage, sliced into rounds

– 1 onion, diced

– 3 cloves garlic, minced

– 3 medium potatoes, peeled and cubed

– 2 carrots, peeled and sliced

– 1 cup lager beer

– 2 cups chicken or beef broth

– 1 tsp caraway seeds

– 1 tsp paprika

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. – In a large pot or Dutch oven, cook the sausage over medium-high heat until browned, about 5 minutes. Remove sausage and set aside.

2. – Add the onion to the pot and sauté for 3-4 minutes until translucent. Add the garlic and cook for 1 minute more.

3. – Pour in the lager beer and use a wooden spoon to scrape up any browned bits from the bottom of the pot.

4. – Add the broth, potatoes, carrots, caraway seeds, and paprika. Season with salt and pepper.

5. – Bring the stew to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

6. – Add the cooked sausage back to the pot and heat through.

7. – Serve hot, garnished with chopped parsley. Enjoy with crusty bread and a cold lager beer.

Notes

– For a thicker stew, you can add a cornstarch slurry towards the end of cooking.

– Feel free to adjust the spices to your taste, adding more or less paprika, caraway, salt, and pepper.

– This stew reheats well and the flavors meld together even more the next day.
