Ingredients

– 1 sheet of puff pastry, thawed

– 8 oz. cremini mushrooms, finely chopped

– 2 shallots, finely chopped

– 2 garlic cloves, minced

– 4 oz. herbed goat cheese

– 2 tbsp. fresh thyme, chopped

– 1 tbsp. olive oil

– Salt and pepper to taste


Instructions

1. – Preheat oven to 400°F. Lightly grease a 12-cup mini muffin tin.

2. – In a skillet, heat the olive oil over medium heat. Add the chopped mushrooms, shallots, and garlic. Sauté until the vegetables are softened, about 5-7 minutes. Season with salt and pepper.

3. – On a lightly floured surface, roll out the puff pastry sheet to a 12×12-inch square. Cut into 12 equal squares.

4. – Press the pastry squares into the muffin tin cups, pressing up the sides to create a tart shell.

5. – Divide the sautéed mushroom mixture evenly among the tart shells. Top each tart with a small spoonful of herbed goat cheese.

6. – Bake for 18-20 minutes, until the pastry is golden brown and the filling is heated through.

7. – Garnish with fresh thyme and serve warm.

Notes
