Description
Mujadara is a traditional Lebanese dish made with a delicious blend of lentils, rice, and warming spices. This comforting, one-pot meal is packed with protein, fiber, and flavor, making it a satisfying vegetarian staple.
Ingredients
– 1 cup green or brown lentils, rinsed
– 1 cup long-grain white rice, rinsed
– 1 large onion, diced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground allspice
– 1/2 teaspoon paprika
– 1/4 teaspoon cayenne pepper (optional)
– Salt and black pepper to taste
– Chopped parsley, for garnish
– Lemon wedges, for serving
Instructions
1. 1. In a large saucepan, combine the lentils and 3 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until lentils are tender but still firm.
2. 2. Drain any excess water from the lentils and set aside.
3. 3. In the same saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, until translucent.
4. 4. Add the minced garlic and sauté for 1 minute, until fragrant.
5. 5. Stir in the cooked lentils, rice, cumin, coriander, cinnamon, allspice, paprika, and cayenne (if using). Season with salt and black pepper to taste.
6. 6. Cover the saucepan and reduce heat to low. Simmer for 20-25 minutes, stirring occasionally, until the rice is tender and has absorbed all the liquid.
7. 7. Remove from heat and let stand, covered, for 5 minutes.
8. 8. Fluff the Mujadara with a fork and serve warm, garnished with chopped parsley and accompanied by lemon wedges.
Notes
– For a creamier texture, add a splash of water or vegetable broth to the cooked Mujadara and stir to combine.
– Customize the spice level by adjusting the amount of cayenne pepper.
– Serve Mujadara as a main dish or as a side with grilled or roasted meats, pita bread, and a fresh salad.
