Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 1/2 cup unsalted butter, chilled and cubed

– 1/4 cup warm water

– 1 lb boneless, skinless chicken breasts, diced

– 1 onion, finely chopped

– 2 cloves garlic, minced

– 1 teaspoon ground cumin

– 1 teaspoon paprika

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground ginger

– 1/4 teaspoon cayenne pepper

– Salt and pepper to taste

– 1 egg, beaten with 1 tablespoon water for egg wash


Instructions

1. 1. In a food processor, combine the flour and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs.

2. 2. Add the warm water and pulse until the dough just begins to come together. Turn the dough out onto a lightly floured surface and knead briefly. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

3. 3. In a skillet over medium-high heat, cook the chicken, onion, and garlic until the chicken is no longer pink, about 5-7 minutes. Stir in the cumin, paprika, cinnamon, ginger, and cayenne. Season with salt and pepper to taste. Allow to cool slightly.

4. 4. Preheat the oven to 400°F. On a lightly floured surface, roll the dough out to a 12-inch square. Cut into 4 equal squares.

5. 5. Place a heaping 1/4 cup of the chicken filling in the center of each square. Brush the edges with the egg wash and fold the dough over the filling to create a triangle. Crimp the edges to seal.

6. 6. Place the filled msmen on a parchment-lined baking sheet. Brush the tops with the remaining egg wash.

7. 7. Bake for 20-25 minutes, or until the pastry is golden brown. Serve hot.

Notes

For a flakier crust, you can incorporate more butter into the dough. Adjust the spices to your preferred level of heat. These msmen can be made in advance and frozen, then baked directly from frozen.
