Ingredients
– 1 sheet of pre-made puff pastry, thawed
– 1 cup diced mixed vegetables (such as bell peppers, onions, and mushrooms)
– 1/2 cup grated cheese (such as cheddar or feta)
– 1 egg, beaten
– 1 tbsp olive oil
– Salt and pepper to taste
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. Unfold the puff pastry sheet and cut it into 12 equal squares.
3. 3. Grease a 12-cup mini muffin tin and gently press the pastry squares into the cups, creating a small tart shell.
4. 4. In a bowl, mix the diced vegetables, grated cheese, and a pinch of salt and pepper.
5. 5. Spoon the veggie mixture evenly into the prepared tart shells.
6. 6. Brush the exposed pastry edges with the beaten egg.
7. 7. Bake the Mini Veggie Tartlets for 15-18 minutes, or until the pastry is golden brown and the filling is hot and bubbly.

Notes
