Ingredients

– 6 hot dogs, cut into 1-inch pieces
Instructions
1. – Preheat oven to 400°F. Grease a 24-cup mini muffin tin.
2. – In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
3. – In a separate bowl, whisk together the milk, vegetable oil, and egg.
4. – Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
5. – Gently fold in the hot dog pieces.
6. – Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
7. – Bake for 12-15 minutes, until the muffins are golden brown.
8. – Let cool in the tin for 5 minutes, then transfer to a wire rack.
