These Scrumptious Mini Apple Hand Pies are the perfect express treat! With a flaky crust and a sweet apple filling, they’re ready in just 30 minutes.
Ingredients
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 3/4 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 3 medium apples, peeled, cored, and diced
– 1/2 cup granulated sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 egg, beaten
Instructions
1. 1. In a food processor, pulse the flour and salt to combine. Add the chilled butter and pulse until the mixture resembles coarse crumbs.
2. 2. Add the ice water and pulse until the dough just begins to come together. Gather the dough into a disc, wrap in plastic, and refrigerate for 30 minutes.
3. 3. In a medium bowl, mix the diced apples, sugar, cinnamon, and nutmeg.
4. 4. Roll out the chilled dough to 1/8-inch thickness. Use a 3-inch round cutter to cut out circles.
5. 5. Place a heaping tablespoon of the apple mixture in the center of half of the circles. Top with the remaining circles and crimp the edges with a fork to seal.
6. 6. Brush the tops of the hand pies with the beaten egg.
7. 7. Bake at 400°F for 18-20 minutes, until golden brown.
Notes
For a flakier crust, you can use a combination of butter and shortening. The hand pies can be stored in an airtight container for up to 3 days.
