– 1 cup long-grain white rice

– 1 cup tomato sauce

– 1 cup chicken or vegetable broth

– 1 teaspoon chili powder

– 1/2 teaspoon ground cumin

– 1/2 teaspoon dried oregano

– Salt and pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. 1. Rinse the rice in a fine-mesh strainer until the water runs clear.

2. 2. Heat the olive oil in a medium saucepan over medium heat. Add the onion and sauté for 2-3 minutes until translucent.

3. 3. Add the garlic and sauté for an additional minute, until fragrant.

4. 4. Stir in the rinsed rice and toast for 2-3 minutes, stirring frequently, until the rice is lightly golden.

5. 5. Pour in the tomato sauce and broth, and add the chili powder, cumin, and oregano. Season with salt and pepper to taste.

6. 6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Notes

For a richer flavor, use chicken broth instead of vegetable broth. You can also add diced tomatoes, peas, or other vegetables to the rice for a more complete dish.
