Description

Indulge in the irresistible flavors of this homemade Mexican Lasagna Recipe. Layers of noodles, seasoned ground beef, beans, and melted cheese come together in a comforting and satisfying dinner dish.


Ingredients

– 1 lb ground beef

– 1 onion, diced

– 2 cloves garlic, minced

– 1 tbsp chili powder

– 1 tsp cumin

– 1 tsp oregano

– Salt and pepper to taste

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can pinto beans, drained and rinsed

– 1 (24 oz) jar tomato sauce

– 9 lasagna noodles

– 2 cups shredded Mexican cheese blend


Instructions

1. – Preheat oven to 375°F.

2. – In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain excess fat.

3. – Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is translucent.

4. – Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute.

5. – Add the black beans, pinto beans, and tomato sauce to the skillet. Stir to combine.

6. – Spread 1 cup of the beef and bean mixture in the bottom of a 9×13 inch baking dish.

7. – Arrange 3 lasagna noodles over the sauce. Top with 1/3 of the remaining beef and bean mixture, then 1/2 cup of the shredded cheese.

8. – Repeat the layers of noodles, beef and bean mixture, and cheese two more times.

9. – Cover the dish with aluminum foil and bake for 30 minutes.

10. – Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

11. – Let the lasagna cool for 10 minutes before serving.

Notes

For a creamier texture, you can add 1/2 cup of ricotta cheese to the beef and bean mixture. You can also customize the spices to your desired level of heat. The leftovers make a great lunch the next day!
