Ingredients

– 1 pound ground beef

– 1/2 cup cooked rice

– 1 onion, finely chopped

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 8 cups beef or chicken broth

– 2 medium carrots, peeled and sliced

– 2 medium zucchini, sliced

– 1 (14.5 oz) can diced tomatoes

– Chopped fresh cilantro for garnish


Instructions

1. – In a large bowl, combine the ground beef, cooked rice, onion, garlic, cumin, oregano, salt, and pepper. Mix well and form into small meatballs, about 1-inch in size.
