Ingredients
– 1 pound ground beef
– 1/2 cup cooked rice
– 1 onion, finely chopped
– 3 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 8 cups beef or chicken broth
– 2 medium carrots, peeled and sliced
– 2 medium zucchini, sliced
– 1 (14.5 oz) can diced tomatoes
– Chopped fresh cilantro for garnish
Instructions
1. – In a large bowl, combine the ground beef, cooked rice, onion, garlic, cumin, oregano, salt, and pepper. Mix well and form into small meatballs, about 1-inch in size.
2. – In a large pot, bring the broth to a boil over high heat. Reduce heat to medium-low and gently add the meatballs to the broth. Simmer for 10 minutes.
3. – Add the carrots, zucchini, and diced tomatoes to the pot. Simmer for an additional 10-15 minutes, or until the vegetables are tender and the meatballs are cooked through.
