Ingredients
– 3 lbs sweet potatoes, peeled and cut into 1-inch cubes
– 1/4 cup olive oil
– 2 tbsp maple syrup
– 1 tsp dried thyme
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. – Preheat oven to 400°F.
2. – In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, thyme, salt, and pepper until well coated.
3. – Spread the seasoned sweet potatoes in a single layer on a large baking sheet.
4. – Roast for 25-30 minutes, flipping halfway, until potatoes are tender and caramelized on the edges.
5. – Serve hot, drizzled with extra maple syrup if desired.
Notes
For extra crispy potatoes, broil for 2-3 minutes at the end. Try different herb and spice combinations to switch up the flavors.
