Ingredients
– 4 medium sweet potatoes
– 1/2 cup crumbled feta cheese
– 1/4 cup chopped kalamata olives
– 2 tablespoons chopped sun-dried tomatoes

– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. – Preheat the oven to 400°F (200°C).
2. – Wash the sweet potatoes and prick them several times with a fork.
3. – Bake the sweet potatoes for 45-55 minutes, or until they are tender when pierced with a fork.
