Ingredients

– 3 ripe bananas, mashed

– 2 cups milk (dairy or non-dairy)

– 2 tablespoons matcha green tea powder

– 1/4 cup granulated sugar

– 1 teaspoon vanilla extract

– Pinch of salt

Instructions

1. – In a medium saucepan, whisk together the mashed bananas, milk, matcha powder, sugar, vanilla, and salt.

2. – Cook over medium heat, stirring constantly, until the mixture thickens and begins to simmer, about 5-7 minutes.

3. – Remove from heat and pour the pudding into individual serving dishes or a large bowl.

4. – Refrigerate for at least 2 hours, or until completely chilled and set.

5. – Serve chilled, garnished with sliced bananas, a dusting of matcha powder, and a sprig of mint, if desired.

Notes

– For a thicker pudding, use 1 1/2 cups of milk.

– Substitute honey or maple syrup for the sugar, if desired.

– Top with toasted coconut flakes, crushed graham crackers, or a drizzle of caramel for extra flavor and texture.
