Description

This Marinated Cilantro Lime Bean Salad is a refreshing and nutritious dish that’s bursting with bright, tangy flavors. Made with protein-rich beans, crunchy veggies, and a zesty lime dressing, it’s the perfect side or light meal for busy weekdays or summer gatherings.


Ingredients

– 2 (15 oz) cans of black beans, drained and rinsed

– 1 red bell pepper, diced

– 1 yellow bell pepper, diced

– 1 red onion, diced

– 1 cup fresh cilantro, chopped

– 2 limes, juiced

– 3 tbsp olive oil

– 1 tsp ground cumin

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. 1. In a large bowl, combine the drained and rinsed black beans, diced bell peppers, diced red onion, and chopped cilantro.

2. 2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper to make the dressing.

3. 3. Pour the dressing over the bean salad and toss gently to coat.

4. 4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

5. 5. Serve chilled or at room temperature.

Notes

This salad can be made ahead of time and refrigerated for up to 4 days. The flavors will continue to develop the longer it marinates. You can also add diced avocado or cherry tomatoes for extra flavor and nutrition.
