Description

Ingredients

– 2 lbs parsnips, peeled and cut into 1-inch pieces

– 3 tbsp olive oil

– 3 tbsp pure maple syrup

– 1 tbsp fresh thyme leaves, plus more for garnish

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. 1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.

2. 2. In a large bowl, toss the parsnip pieces with the olive oil, maple syrup, thyme, salt, and pepper until evenly coated.

3. 3. Spread the parsnips in a single layer on the prepared baking sheet.

4. 4. Roast for 20-25 minutes, flipping halfway, until parsnips are tender and caramelized.

5. 5. Transfer to a serving dish and garnish with additional fresh thyme. Serve immediately.
