Description

Tender, caramelized apples and carrots glazed in a sweet and savory maple-Dijon sauce. This easy, flavorful side dish is perfect for weeknights or holiday gatherings.


Ingredients

– 3 medium apples, peeled, cored, and cut into 1-inch chunks

– 6 medium carrots, peeled and cut into 1-inch pieces

– 2 tbsp olive oil

– 2 tbsp pure maple syrup

– 2 tbsp Dijon mustard

– 1 tsp garlic powder

– 1/2 tsp dried thyme

– 1/4 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Preheat oven to 400°F. Line a large baking sheet with parchment paper.

2. – In a large bowl, toss the apple chunks and carrot pieces with the olive oil, maple syrup, Dijon mustard, garlic powder, thyme, salt, and pepper until well coated.

3. – Spread the mixture in a single layer on the prepared baking sheet.

4. – Roast for 25-30 minutes, stirring halfway, until the apples and carrots are tender and caramelized.

5. – Serve hot, garnished with additional thyme if desired.

Notes

– For best results, use crisp, tart apples like Honeycrisp or Granny Smith.

– Add a sprinkle of crushed red pepper flakes for a little heat.

– Leftovers can be stored in the refrigerator for up to 4 days.
