Ingredients

– 1 lb large shrimp, peeled and deveined

– 1 cup white vinegar

– 1/4 cup olive oil

– 2 tablespoons fresh lemon juice

– 2 garlic cloves, minced

– 1 teaspoon Creole seasoning

– 1/2 teaspoon crushed red pepper flakes

– 1/4 cup chopped fresh parsley

– 1/4 cup chopped fresh cilantro

Instructions

1. – In a large bowl, combine the shrimp, vinegar, olive oil, lemon juice, garlic, Creole seasoning, and red pepper flakes. Toss to coat the shrimp evenly.

2. – Cover the bowl and refrigerate for at least 30 minutes, stirring occasionally, to allow the flavors to meld.

3. – Just before serving, stir in the chopped parsley and cilantro.

4. – Serve chilled or at room temperature, with toothpicks or small forks for easy handling.

Notes

– For best results, prepare the pickled shrimp a day in advance to allow the flavors to fully develop.

– Adjust the amount of Creole seasoning or red pepper flakes to your desired level of spiciness.

– Leftover pickled shrimp can be stored in an airtight container in the refrigerator for up to 5 days.
