Ingredients
– 8 oz elbow macaroni
– 2 tbsp unsalted butter
– 2 tbsp all-purpose flour
– 2 cups whole milk
– 1 cup shredded cheddar cheese
– 1 cup shredded Gruyère cheese
– 8 oz cooked lobster meat, chopped
– 1/2 cup panko breadcrumbs
– 2 tbsp chopped fresh parsley
– Salt and pepper to taste
Instructions
1. – Cook the elbow macaroni according to package instructions. Drain and set aside.
2. – In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
3. – Gradually whisk in the milk and cook, stirring constantly, until the sauce thickens, about 5 minutes.
4. – Remove the pan from heat and stir in the cheddar and Gruyère cheeses until melted and smooth.
5. – Fold in the cooked macaroni and lobster meat. Season with salt and pepper.
6. – Preheat the oven to 400°F. Grease a 24-cup mini muffin tin.
7. – Scoop the mac and cheese mixture into the prepared muffin cups, packing it down gently.
8. – Top each bite with a sprinkle of panko breadcrumbs.
9. – Bake for 15-18 minutes, until the tops are golden brown.
10. – Garnish with chopped fresh parsley and serve warm.
Notes
– For extra flavor, add a pinch of cayenne pepper or a splash of hot sauce to the cheese sauce.
– You can use any type of cooked seafood, such as crab or shrimp, in place of the lobster.
