Ingredients

– 2 medium russet potatoes, peeled and cubed

– 1 lb ground beef

– 1 packet taco seasoning

– 1 cup shredded cheddar cheese

– 1 cup diced tomatoes

– 1/2 cup sour cream

– 2 tbsp chopped fresh cilantro


Instructions

1. – Bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15 minutes. Drain and mash the potatoes.

2. – In a skillet, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

3. – Stir the taco seasoning into the cooked ground beef until well combined.

4. – Layer the mashed potatoes and seasoned ground beef into taco shells.

5. – Top with shredded cheddar cheese, diced tomatoes, sour cream, and chopped cilantro.

6. – Serve immediately and enjoy!

Notes

For a spicier version, add diced jalapeños or a dash of hot sauce. You can also swap out the taco shells for tortilla chips or serve the loaded potato mixture in a bowl.
