Indulge in the ultimate comfort food with these Classic Loaded Beef Enchiladas – a family-favorite homemade recipe bursting with flavorful seasoned ground beef, melted cheese, and rich enchilada sauce.


Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tbsp chili powder

– 1 tsp ground cumin

– 1 tsp dried oregano

– 1/2 tsp salt

– 1/4 tsp black pepper

– 15 oz can tomato sauce

– 10 oz can enchilada sauce

– 12 corn tortillas

– 2 cups shredded cheddar cheese

– 2 cups shredded Monterey Jack cheese


Instructions

1. – Preheat oven to 375°F.

2. – In a large skillet, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

3. – Add the onion and garlic to the skillet and cook for 2-3 minutes until softened.

4. – Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute.

5. – Add the tomato sauce and enchilada sauce to the skillet and stir to combine. Simmer for 5 minutes.

6. – Grease a 9×13 baking dish. Spread 1/2 cup of the beef mixture in the bottom of the dish.

7. – Warm the tortillas according to package instructions. Spoon about 2-3 tablespoons of the beef mixture into each tortilla and roll up tightly. Arrange the filled tortillas seam-side down in the baking dish.

8. – Pour the remaining beef mixture over the top of the enchiladas. Sprinkle the cheddar and Monterey Jack cheeses evenly over the top.

9. – Bake for 20-25 minutes, until the cheese is melted and bubbly.

10. – Serve hot, garnished with your favorite toppings like sour cream, diced onions, and fresh cilantro.

Notes

– For a spicier version, use a hotter enchilada sauce or add diced jalapeños to the beef mixture.

– Customize the cheese blend to your liking, using a mix of Monterey Jack, cheddar, Pepper Jack, or Oaxaca cheese.

– Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven or microwave before serving.
