Lemon Capellini Salad is a bright, refreshing pasta dish that’s perfect for summer. The tangy lemon dressing, tender capellini noodles, and fresh herbs come together for a light and flavorful meal or side.
Ingredients
– 8 oz capellini pasta
– 1/4 cup olive oil
– 2 lemons, juiced and zested
– 2 cloves garlic, minced
– 1/4 cup fresh parsley, chopped
– Salt and pepper to taste
Instructions
1. – Cook the capellini pasta according to package instructions. Drain and rinse under cold water.
2. – In a large bowl, whisk together the olive oil, lemon juice, lemon zest, and minced garlic.
3. – Add the cooked capellini and toss to coat evenly with the dressing.
4. – Stir in the chopped parsley and season with salt and pepper to taste.
5. – Serve chilled or at room temperature.
Notes
For added flavor, you can also add a pinch of red pepper flakes or some grated Parmesan cheese. This salad can be made in advance and refrigerated for up to 3 days.
