Description

Lemon Asparagus Pasta is a bright, flavorful dish that comes together in just 20 minutes. The zesty lemon and tender asparagus create a delightful and satisfying meal that’s perfect for busy weeknights.


Ingredients

– 8 oz. linguine or spaghetti

– 1 lb. asparagus, trimmed and cut into 1-inch pieces

– 2 tbsp. olive oil

– 3 cloves garlic, minced

– 1/4 cup freshly squeezed lemon juice

– 1/2 cup grated Parmesan cheese, plus more for serving

– 2 tbsp. chopped fresh parsley

– Salt and freshly ground black pepper to taste


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. 2. In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and garlic and sauté for 3-5 minutes, until the asparagus is tender-crisp.

3. 3. Add the cooked pasta, lemon juice, Parmesan cheese, and parsley to the skillet. Toss to combine and heat through, about 2 minutes.

4. 4. Season with salt and pepper to taste. Serve immediately, garnished with additional Parmesan cheese.

Notes

This dish can be easily adapted to your taste. Try adding grilled chicken or shrimp for extra protein. You can also swap out the asparagus for other seasonal veggies like zucchini or broccoli.
