Description

Savor the bright, tangy flavors of this authentic Lebanese Lemon Lentil Soup. Made with tender lentils, fresh lemon, and aromatic spices, this nourishing soup is a weeknight staple.


Ingredients

– 1 cup brown lentils, rinsed

– 4 cups vegetable broth

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon cayenne pepper (optional)

– Juice of 1 lemon

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes until translucent.

2. – Stir in the garlic and spices (cumin, coriander, cinnamon, cayenne) and cook for 1 minute until fragrant.

3. – Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.

4. – Remove from heat and stir in the lemon juice. Season with salt and pepper to taste.

5. – Ladle the soup into bowls and garnish with chopped parsley.

Notes

This soup can be made in advance and reheated. It also freezes well for up to 3 months. For a heartier meal, serve with warm pita bread or a side salad.
