Ingredients
– 1 lb ground beef
– 1 tbsp sesame oil
– 2 tbsp gochujang (Korean chili paste)
– 2 tbsp soy sauce
– 1 tbsp brown sugar
– 2 cloves garlic, minced
– 1 inch ginger, grated
– 1/2 tsp black pepper
– 2 cups cooked white rice
– 1 cup chopped kimchi
– 4 large tortilla wraps
– 1/2 cup sour cream
– 2 tbsp chopped green onions
Instructions
1. – In a large skillet, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes.
2. – Drain any excess fat, then add the sesame oil, gochujang, soy sauce, brown sugar, garlic, ginger, and black pepper. Stir to combine and cook for an additional 2-3 minutes.
3. – Warm the tortilla wraps according to package instructions.
4. – To assemble the burritos, spread a layer of rice down the center of each tortilla, top with the seasoned beef, kimchi, sour cream, and green onions.
5. – Fold the sides of the tortilla over the filling, then roll it up tightly to create a burrito.
6. – Serve immediately and enjoy!
Notes
– For a spicier kick, add more gochujang to the beef mixture.
– Substitute the kimchi with other fermented vegetables like sauerkraut or pickled radish for a different flavor profile.
– These burritos can be made ahead and stored in the fridge or freezer for quick meals on the go.
