Ingredients

– 2 cups all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1 1/2 cups buttermilk

– 2 eggs

– 2 tablespoons butter, melted

– 1 cup chopped kimchi

– 1/2 cup thinly sliced scallions


Instructions

1. – Preheat your waffle iron to medium-high heat.

2. – In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

3. – In a separate bowl, beat the buttermilk, eggs, and melted butter until well combined.

4. – Pour the buttermilk mixture into the dry ingredients and whisk just until combined (do not overmix).

5. – Fold in the chopped kimchi and sliced scallions.

6. – Grease the preheated waffle iron and scoop about 1/2 cup of the batter onto the center of the iron.

7. – Cook for 3-4 minutes, or until the waffle is golden brown and crispy.

8. – Repeat with the remaining batter.

9. – Serve the Kimchi Scallion Waffles hot, topped with additional sliced scallions and a drizzle of spicy gochujang sauce, if desired.

Notes

For a spicier version, add an extra tablespoon of chopped kimchi. The waffles can be kept warm in a 200°F oven while cooking the remaining batter. Leftover waffles can be frozen and reheated in the toaster or oven.
