Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 cloves garlic, minced

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– 6 cups chicken broth

– 2 cups shredded cooked chicken

– 2 cups small pasta (like ditalini or orzo)

– Salt and pepper to taste

– Freshly grated parmesan cheese, for serving

– Chopped fresh parsley, for serving


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook for 5-7 minutes, until the vegetables are softened.
