Ingredients
– 1 lb brussels sprouts, trimmed and thinly sliced
– 1 cup cherry tomatoes, halved
– 1/2 cup shredded Parmesan cheese
– 1/4 cup olive oil
– 2 tbsp red wine vinegar
– 2 cloves garlic, minced
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. – In a large bowl, combine the sliced brussels sprouts, cherry tomatoes, and Parmesan cheese.
2. – In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt, and black pepper.
3. – Pour the dressing over the brussels sprouts mixture and toss to coat evenly.
4. – Serve the Italian Chopped Brussels Sprouts Salad immediately, or refrigerate for up to 3 days.
Notes
For a heartier meal, you can add grilled chicken or chickpeas. To make it vegan, simply omit the Parmesan cheese.
