These Irish Soda Bread Muffins are a delightful, easy-to-make twist on the classic Irish soda bread. With a tender, moist crumb and a golden-brown crust, they make for a perfect breakfast, snack, or anytime treat.
Ingredients
– 2 cups all-purpose flour
– 1 tablespoon white sugar
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup buttermilk
– 4 tablespoons unsalted butter, melted
Instructions
1. – Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line it with paper liners.
2. – In a large bowl, whisk together the flour, sugar, baking soda, and salt.
3. – In a separate bowl, combine the buttermilk and melted butter.
4. – Pour the buttermilk mixture into the dry ingredients and stir just until combined, being careful not to overmix.
5. – Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
6. – Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
7. – Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, substitute 2 tablespoons of the buttermilk with Irish whiskey. You can also add caraway seeds or dried currants to the batter for extra texture and flavor.
